All tea comes from the leaves of the same plant, a warm-weather evergreen named Camellia sinensis. While there are countless varieties of tea, there are only six categories of tea, the differences among these six categories are the result of various degrees of processing and the level of oxidation :
  • Black - fully oxidized
  • Oolong - partially oxidized
  • White - lightly oxidized
  • Pu-erh (aka Dark) - fermented and variants oxidized and not
  • Green - not oxidized, Chinese are typically pan-fired in order to halt oxidation, while Japanese tea are typically steamed
  • Yellow - not oxidized
in detail

Green tea (caffeine inside) - tried Japanese Sencha, 5 stars.

Rooibos is herbal tea (called tisanes), originally grow in South Africa (no caffeine inside) - other examples are ginger, chamomile, peppermint.

Red tea is what called 'Black tea' (caffeine inside)

Might act like estrogen. If you have any condition that might be made worse by exposure to estrogen, don't use black tea (source) (study)

Black tea is high in tannins, and brew up a reddish amber color.
Black tea is dried and oxidized under intense heat and/or sun, during which they lose much of their medicinal constituents.

don't forget tea can interfere with iron absorption (source)

coffee = blood clotting
tea = blood thinning

prepare warm water by boiling 200ml, after, add 300ml cold water.

How green tea changes estrogen

The research found that those postmenopausal women who drank green tea daily had 20% less urinary estrone and 40% less urinary estradiol levels, when compared to those levels of women who drank green tea less than one time per week. src (mirror)

Green tea potential to lower estrogen could stem from its polyphenols that inhibit aromatase, the crucial enzyme for converting androgens to estrogen. Tea polyphenol is the active compound in different teas, responsible for various health benefits.

The research found that green tea consumption was linked to decreased levels of total estrogens. Catechins from green tea could act on aromatase by modulating the expression of CYP19 (aromatase) isoforms. This tea could also act on estrogen receptors and downplay the expression of this hormone. src

Adding milk to your tea prevent staining

Tea is worse than coffee when it comes to staining your teeth because of its high tannin content. The darker your tea, the higher the risk of staining, so black tea can have the greatest impact, while herbal or green teas aren't so bad.

Add dash of (evaporated) milk (60ml) to your cup, a study published in the International Journal of Dental Hygiene has discovered. Casein, a protein found in milk, attaches to these tannin molecules and prevents them from sticking to your teeth. src

Soy milk does not contain casein.

Evaporated Milk

It's cows milk that has gone through a cooking process to remove—or evaporate—over half of the water content. The resulting liquid is creamier and thicker than regular whole milk, making it the perfect addition to both sweet and savory dishes. The remaining milk is then packaged for sale, generally in shelf-stable cans or tetra packs, giving it a very long shelf life.

Use an opened can of evaporated milk within 1 week at the most.

Is entirely safe to drink evaporated milk without diluted with water.

In most cases, mixing equal parts water and evaporated milk will create a drink that is roughly equivalent to whole milk.

When you first open a can of evaporated milk, it is a good idea to make a small air hole, cover it with your finger or a cloth, and give the can a good shake.

Though evaporated milk is homogenized to keep the liquid and solid uniformly distributed, shaking the can before using it will better disperse the thicker cream which can settle to the bottom over time. It is also sterilized to prevent bacterial contamination and growth. The packaging process ensures it will stay safe without refrigeration until the package has been opened.

Due to the heating process required to encourage evaporation, the sugars in the milk do caramelize a very small amount, adding a bit of color and a very slight hint of sweetness compared to conventional milk. src

Green tea and iron, bad combination

It is not only a matter of what we eat, but also when we eat and what else we eat with it.

If you drink green tea after an iron-rich meal, the main compound in the tea will bind to the iron, when that occurs, the green tea loses its potential as an antioxidant. In order to get the benefits of green tea, it may be best to not consume it with iron-rich foods/supplements. The EGCG (the main compound) inhibits myeloperoxidase*. With iron, EGCG loses its ability to inhibit myeloperoxidase, counterproductive as both nutrients would bind and cancel each other out.. src / 2

* = a pro-inflammatory enzyme released by white blood cells during inflammation. The enzyme mitigating IBD** flare-ups.
** = is characterized by chronic inflammation of the digestive tract, which results in bloody diarrhea, pain, fatigue, weight loss and other symptoms including iron deficiency/anemia.

multiple unknown sources - mentioning 30-40min before/after meal to avoid inhibit.

Green tea blocks DAO

Unfortunately, green tea (as well as black and mate tea) block DAO in the gut.

DAO is the enzyme that the body uses to break down histamine from foods and histamine produced in the gut.

People with histamine intolerance tend to have lower levels of this enzyme. This might be because of their genes, inflammation or dysbiosis in the gut or due to nutritional deficiencies source
