Histamine is a product of fermentation, maturation and putrefaction, which may be found in most foods in varying concentrations.

Histamine intolerance (HIT) is not an allergy but a metabolic disorder (impaired degradation of histamine) without involvement of the immune system.

Histamine is a substance, which is naturally produced in the body and regulates various functions (mediator, messenger, transmitter). In case of infections and allergic reactions, histamine puts the body's defense mechanisms on the alert. Histamine is also an inflammation mediator, a tissue hormone and neurotransmitter; it plays a role in the circadian rhythm, the bowel movements and many other processes. The body may produce histamine, store it in certain cell types and if necessary release it all at once. source

DAO deficiency - histamine route within the organism

In the metabolism of histamine, when it should be degraded by DAO enzyme in order to become N-acetyl aldehyde imidazole, an accumulation of the amine is produced due to the lack of (DAO) enzyme in the intestinal mucosa cells. Low (DAO) enzyme activity causes the concentration of histamine, which comes from the food and is generally considered normal, not to be metabolized and a transepithelial permeation of exogenous histamine occurs.

This way, histamine enters the bloodstream increasing its plasma concentration and once located in blood it spreads throughout the body.

The most frequent symptoms derived from DAO Deficiency :
  • Migraine and other vascular headaches.
  • Gastrointestinal disorders, especially those associated with irritable bowel syndrome, such as constipation, diarrhea, satiety, flatulence or swollen feeling.
  • Dermatological disorders such as dry skin, atopy or psoriasis.
  • Soft-tissue pains usually diagnosed as fibromyalgia.
  • Chronic fatigue.

DAO supplements do not get into your bloodstream and cannot increase your DAO levels internally. This means that supplementing with the DAO enzyme only helps you break histamine down that you’re consuming. source

What is histamine?
Histamine is a messenger substance belonging to the group of the so-called biogenic amines. It is formed by the body itself; however, it is also absorbed in a natural way as it is contained in many food products. Being a biologic messenger substance, histamine has various functions in the body. As a neurotransmitter, it gets involved – among other things – in the :
  • neurotransmission, immunomodulation, hematopoiesis, wound healing
  • regulation of the sleep-wake rhythm
  • regulation of the appetite control
  • learning ability
  • memory capacity
However, histamine mainly acts as a mediator of inflammatory processes in allergic reactions.

What happens to histamine taken up from food?
Normally, eating histamine-containing food will have no consequences since such food derived histamines will primarily and rapidly be broken down in the intestine already by the body own diamine oxidase (DAO) enzyme. When eating a high histamine diet, the activity of this diamine oxidase (DAO) enzyme may no longer be sufficient thus leading to delayed decomposition of histamine in the intestine. Moreover, alcohol and certain medications may significantly reduce the DAO enzyme activity. When the decomposition of histamine is delayed, its level in the body will increase for the moment.

Which foods contain histamine?
In particular, food aged (maturated) or stored for a long time will have a high content of histamine and other biogenic amines. In addition, a variety of foodstuffs is acting as so-called histamine liberators because they also do release histamine in the intestine. Some examples include the following foodstuffs:
  • Alcohol, in particular red wine and sparkling wine
  • Cheese
  • Seafood, fish and fish sauces
  • Raw sausages, such as salami or ham
  • Sauerkraut
  • Various vegetables, such as tomatoes, spinach, eggplant
  • Various types of fruit, i.e. strawberries, pineapples, bananas
In particular, combined consumption of food items rich in histamine - such as alcohol and cheese – may contribute to increasing the histamine level in the body.

How does DAOSiN work?
Taking one tablet of DAOSiN prior to a meal increases the DAO level in the intestine and thus the ability to break down histamine by natural DAO activity. One tablet of DAOSiN has an activity of 23 kHDU (histamine degrading units). Ingredient, protein extract from pig kidney.

  • Curcumin. In one study, curcumin inhibited the release of DAO in the intestines of rats; however, it also appeared to prevent mast cells from releasing histamine.

In addition to histamine-rich food, many foods such as citrus foods are considered to have the capacity to release histamine directly from tissue mast cells, even if they themselves contain only small amounts of histamine.

Mast cells are the immune cells that produce the most histamine in your body. They release stored histamine in response to a number of triggers, including allergens and infection.

You need to start eating things right out of the ground or right out of the freezer. Don't ever defrost something again by throwing it in lukewarm water. To defrost meats put them in an ice bath, and inside the fridge. Don't put things through multiple defrost/freeze cycles, so don't refreeze any meat or soup.

There are 4 types of problem foods for people with Histamine Intolerance
  • Actual histamines: from spoilage
  • Histamine Liberators: food like garlic, nuts, citrus, and chocolate have no histamine BUT do cause your body to produce histamines in order to digest them. These foods don't produce an immediate response, and the symptoms could happen over the course of the next 3 days.
  • Other biogenic amines: Since histaDINe is usually only in animals with circulatory systems, plants that cause symptoms actually have a different amines, (putrescine, cadaverine, spermine) that build up. This stupid stuff hogs the enzyme that breaks down histamine, keeping it in your system longer. You'll find these in lots of flour and breads.
  • DAO blockers also cause symptoms: Like biogenic amines these type of foods hog the enzymes that could be used to eliminate histamines, leading to a build-up of histamine in the blood. Alcohol, and spicy foods interact with the histamine system in this way, because DAO breaks down histamine. Fun fact: The feeling of an alcohol hangover is due to histamine saturation that occurs in the blood.

  • Wine, and chili paste actually actually contain all 4 types^ of histamine irritants above, making them the worst foods you could eat, and guaranteeing symptoms.
  • Keep potatoes to fridge
  • Canned or dried foods not allowed
  • Vinegar is the absolute worse. Even just a few drops in a marinade or sauce and it will cause you pain. This is the hardest part of the whole thing for me.
  • Don't eat any fermented foods. Alcohol included.

A final note that helped me come to terms with this all:

I suffer these symptoms because I endured allergies my whole life in an very unhealthy way. I've been living in constant inflammation, trying to expell pollen and dust out of my body.

Our bodies produce histamines (a neurotransmitter) because they allow our organs to signal the brain for help when foreign substances enter the body. They're produced along with antibodies, and histamines cause organs to inflame, or spasm, or cough, in order to squeeze out a foreign pathogen...

Your and my bodies are SO sensitive to the histamine immune response, that we actually react to histamine in our diets, AS IF they were naturally synthesized as part of our body requesting inflammation!!

So we suffer because our bodies think the histamines in our diet must be coming about naturally from our own white blood cells and mast cells, and our bodies react by triggering a massive phase-2 immune response.

The medical term for histamine intolerance is MCAD - Mast Cell Activation Disease.

The liver’s to-do list is second only to that of the brain and numbers well over 300 items, including systematically reworking the food we eat into usable building blocks for our cells; neutralizing the many potentially harmful substances that we incidentally or deliberately ingest; generating a vast pharmacopoeia of hormones, enzymes, clotting factors and immune molecules; controlling blood chemistry.

The liver is our largest internal organ, weighing 1.6kg and measuring 15cm long.

Most organs have a single source of blood. The liver alone has two blood supplies, the hepatic artery conveying oxygen-rich blood from the heart, the hepatic portal vein dropping off blood drained from the intestines and spleen. That portal blood delivers semi-processed foodstuffs in need of hepatic massaging, conversion, detoxification, storage, secretion, elimination.

Everything you put in your mouth must go through the liver before it does anything useful elsewhere in the body.

As the master sampler of circulating blood, the liver keeps track of the body’s moment-to-moment energy demands, releasing glucose as needed from its stash of stored glycogen, along with any vitamins, minerals, lipids, amino acids or other micronutrients that might be required.

As part of his mid-life health kick, Jim had started taking a green tea supplement because he had heard it might have cardiac benefits. These supplements have grown in popularity in recent years, often breathlessly promoted online for their antioxidant benefits, and their supposed ability to aid weight loss and prevent cancer.

He had been taking the green tea supplement for two to three months when he became ill. According to Jim's medical record this is the presumed cause of his liver injury. "It was shocking because I'd only heard about the benefits," remembers Jim. "I'd not heard about any problems."

The greater risk comes in people who are taking these more concentrated extracts.

While millions of people take green tea supplements safely, at least 80 cases of liver injury linked to green tea supplements have been reported around the world.

Concern has focused on a potentially toxic ingredient called Epigallocatechin-3-gallate or EGCG, the most abundant of the naturally occurring compounds with antioxidant properties in green tea, called catechins. There are likely to be a number of factors that might make an individual susceptible to harm from EGCG including genetics, and the way supplements are used.

Catechins from green tea drinks are "generally safe", but when taken as supplements catechin doses at or above 800mg per day "may pose health concerns".

Jim is pursuing a lawsuit against the American firm Vitacost, which sold the green tea supplement he took.

I didn't expect harm. I expected that I might waste my money, I may take these and they don't do a bit of good. I can accept that risk," he says. "But the risk that it could cause my liver to fail, that's a risk that's too high for somebody to take. source

8.4 elimination of histamines
The so-called antihistamine diet is used in the disease hit (histamine intolerance), which arises from the imbalance of histamine metabolism in the body and its subsequent accumulation. We can diagnose with blood tests, DAO enzyme activity, or stool. The Institute of functional medicine and nutrition tests the concentration of histamine along with intestinal permeability (zonulin) in the stool. If their concentration is higher, this indicates a leaky gut, possible inflammatory bowel disease, or food intolerance mediated by IgG4 antibodies. Histamine can enter the body either through food or through excessive production of histamines by the body itself, which is not processed due to low levels or activity of Dao (diamine oxidase) and HNMT (histamine-N-methyltransferase) enzymes.

Salicylates are best known as drugs, the consumption of which is constantly increasing, as they have antipyretic effects, among other things. The basic structure of salicylates is salicylic acid and its derivatives. Many foods contain natural salicylates, which may be responsible for allergic reactions in patients sensitive to aspirin. The richest source of salicylic acid is dried herbs (up to 28.6 mg/ kg), already in smaller quantities it is found in lemons, fresh grapes, jams, plums, bananas, fresh tomatoes, carrots, cucumbers, frozen peas. Tomatoes are part of the Nightshade or Solanaceae family of plants. this family also includes potato, tobacco, aubergine, peppers and chillies. There is a lot of allergic cross-reaction across this plant family.

A tomato has a variety of allergens spread across its skin, flesh and seed and pollen.

Tomato LTPs (Lipid Transfer Proteins) can cause stronger reactions. There can be cross-reaction with LTPs in other foods such as Rosaceae fruit (apple family), tree nuts, Peanut, beer, Maize, Mustard, Asparagus, Grape, Mulberry, Cabbage, Date, Orange, Fig, Kiwi, Lupin, Fennel, Celery, Aubergine, Lettuce, Chestnut and Pineapple
